- 1/4 cup butter
- 2/3 cup brown sugar, firmly packed
- 1 can pineapple slices
- - maraschino cherries optional
- 1 1/3 cups all purpose flour
- 1 cup sugar
- 1/3 cup shortening
- 3/4 cup milk
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 - egg large
- 1/4 teaspoon vanilla extract or almond extract
- - whipped cream, sweetened

How To Make pineapple upside down cake

Step 1Preheat oven at 350 degrees

Step 2in a 9x9x2 baking pan melt butter in oven. once melted remove from oven and sprinkle brown sugar evenly in baking dish. Then place pineapple rings in rows, then put cherries in each ring.

Step 3In a large mixing bowl beat remaning ingredients with electric mixer on low for 30 seconds scraping sides of bowl to make sure all ingredients are mixed in well, then beat on high for 3 minutes, scraping bowel occasionally. Pour mixture over the prepared pan of pineapples.

Step 4Bake 50 minutes, or until tooth pick comes out clean.

Step 5As soon as you take cake out of oven turn it over on a heat proof plate. Leave pan on for 3 to 5 minutes then pick pan up slowly. (sometimes you will need a spatula to scrape brown sugar pineapple on top of cake. becareful the heat can burn you.

Step 6Serve with whipped cream if you'd like.
