My mother has been making this for many years and it is so moist!!!

Ingredients

  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups flour
  • 2 - eggs
  • 1/2 cup oil
  • 1 - #2 can crushed pineapple (undrained)

How To Make pineapple sheet cake and topping

  • Step 1
    Mix all dry ingredients in bowl. Add oil, eggs, and pineapple. Mix thoroughly. Bake in greased 15 x 10 x 1" pan (jelly roll pan) at 350 degrees for 25 - 30 minutes.
  • Step 2
    Topping: 2/3 c. evaporated milk, 1 stick butter, 1 c. sugar. Boil this mixture in pan for 10 minutes; stirring constantly. Add 1 cup chopped nuts and 1 cup coconut (opt). Pour over hot cake.
