Ingredients

  • PINEAPPLE POUND CAKE

  • 1/2 c
    crisco shortening
  • 1 c
    butter
  • 2 3/4 c
    sugar
  • 6
    eggs
  • 3 c
    flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/4 c
    milk
  • 1 tsp
    vanilla
  • 3/4 c
    crushed pineapple, undrained
  • PINEAPPLE POUND CAKE GLAZE

  • 1 stick
    butter
  • 1 1/2 c
    confectioner's sugar
  • 1 c
    crushed pineapple, drained

How to Make Pineapple Pound Cake

Step-by-Step

  1. Pineapple Pound Cake - Cream butter. Gradually add sugar. Cream thoroughly.
  2. Add eggs, one at a time, beating well after each addition.
  3. Sift together flour, baking powder and salt. Add to creamed mixture one large spoonful at a time, alternately with milk.
  4. Add vanilla. Stir in crushed pineapple with juice and blend well.
  5. Pour into well greased and floured tube pan and bake at 350 for 1 1/4 - 1 1/2 hours or until top springs back when lightly touched.
  6. Let stand for a few minutes in pan. Move knife around edge and put onto cake plate. Pour glaze over warm cake.
  7. Pineapple Glaze - Cream butter and add confectioner's sugar and drained crushed pineapple. Pour over cake immediately.
