Marge & Tim Rhines - this recipe came from Ana Arnold (wife of Tim's advisor when he was in graduate school). It is delicious and easy to make.

Ingredients

  • 2 - eggs
  • 1 teaspoon vanilla
  • 1 can 20 oz can pineapple (do not drain juice)
  • 1 teaspoon soda
  • 2 cups sugar
  • 2 cups flour
  • 1/2 cup chopped pecans
  • FROSTING
  • 8 ounces softened cream cheese
  • 3/4 cup powdered sugar
  • 1/2 cup softened oleo
  • 1 teaspoon vanilla

How To Make pineapple - pecan cake

  • Step 1
    Mix all ingredients except nuts and then fold in nuts.
  • Step 2
    Pour into greased and floured 9 x 13 pan.
  • Step 3
    Bake at 350 degrees for 35 minutes and then cool.
  • Step 4
    For frosting - mix all ingredients together. Spread over cake. Store cake in refrigerator.
