I found this recipe in a magazine several years ago. I hope you will enjoy it as much as our family does.

yellow cake mix
1 can(s)
(20 oz) crushed pineapple w/juice
1 c
1 pkg
(3 oz) instant vanilla pudding
1 can(s)
(3oz) flaked coconut
(8 oz) carton of cool whip
1 c
chopped pecans

How to Make Pineapple Icebox Cake


  • 1Bake yellow cake mix as directed in a 9" x 13" pan.
  • 2Simmer pineapple (with juice) & sugar in a small saucepan until sugar dissolves.
  • 3Poke holes in the warm cake with a long tined fork and pour warm pineapple mixture evenly over the cake. Chill cake at least 1 hour.
  • 4Prepare pudding according to package directions. Stir in coconut. Spread over pineapple and cover with whipped topping.
  • 5Sprinkle with pecans. Keep refrigerated.
