Ingredients
- 1 box yellow cake mix
- 1 can (20 oz) crushed pineapple w/juice
- 1 cup sugar
- 1 package (3 oz) instant vanilla pudding
- 1 can (3oz) flaked coconut
- 1 - (8 oz) carton of cool whip
- 1 cup chopped pecans
How To Make pineapple icebox cake

Step 1Bake yellow cake mix as directed in a 9" x 13" pan.

Step 2Simmer pineapple (with juice) & sugar in a small saucepan until sugar dissolves.

Step 3Poke holes in the warm cake with a long tined fork and pour warm pineapple mixture evenly over the cake. Chill cake at least 1 hour.

Step 4Prepare pudding according to package directions. Stir in coconut. Spread over pineapple and cover with whipped topping.

Step 5Sprinkle with pecans. Keep refrigerated.
