I found this recipe in a magazine several years ago. I hope you will enjoy it as much as our family does.

Ingredients

  • 1 box yellow cake mix
  • 1 can (20 oz) crushed pineapple w/juice
  • 1 cup sugar
  • 1 package (3 oz) instant vanilla pudding
  • 1 can (3oz) flaked coconut
  • 1 - (8 oz) carton of cool whip
  • 1 cup chopped pecans

How To Make pineapple icebox cake

  • Step 1
    Bake yellow cake mix as directed in a 9" x 13" pan.
  • Step 2
    Simmer pineapple (with juice) & sugar in a small saucepan until sugar dissolves.
  • Step 3
    Poke holes in the warm cake with a long tined fork and pour warm pineapple mixture evenly over the cake. Chill cake at least 1 hour.
  • Step 4
    Prepare pudding according to package directions. Stir in coconut. Spread over pineapple and cover with whipped topping.
  • Step 5
    Sprinkle with pecans. Keep refrigerated.
