My Mother gave me this recipe 9yrs. ago and it has become a favorite of my extended family! You just can't seem to leave it alone!! And it stays SO moist, you won't believe it! JUST MAKE SURE YOU SPOON THE HOT ICING ONTO THE HOT CAKE, DON'T POUR, OR YOU WILL HAVE A FLAT CAKE!!

Ingredients
- 1 - yellow cake mix
- ICING
- 1 stick oleo
- 1 1/2 cups white sugar
- 2 tablespoons flour-heaping
- 1 can crushed pineapple,undrained(15 1/4oz. size)
- 2 - eggs, well beaten
How To Make pineapple cake

Step 1Mix & bake the cake according to box directions in 9x13" cake pan.

Step 2For Icing- Mix together & cook on stove until thick (doesn't take long!)Remove from heat and add 1 cup flaked coconut.

Step 3While both cake AND icing are still hot-- SPOON icing onto cake. Place in frig until cool.
