Ingredients

  • 2 - eggs, beaten light & fluffy
  • 1 - 20-oz. can crushed pineapple, undrained
  • 1 cup brown sugar
  • 1 cup chopped walnuts
  • 2 cups flour
  • 1 cup granulated sugar
  • 2 teaspoons baking soda

How To Make pineapple cake

  • Step 1
    Mix altogether by hand. Spread batter in ungreased 13 x 9 pan. Bake at 350 for 45-50 mins. Cool. Cover with cream-cheese frosting:

    Cream-cheese frosting: 1 3 oz. package cream-cheese, softened. 1/4 cup margarine or butter 1 tsp. vanilla Add 2 cups powdered sugar, 1/2 tsp.ginger. Beat well with electric mixer. (May add coconut if desired). Spread on cooled cake.
