Ingredients

  • CAKE:
  • 2 cups all purpose flour
  • 1-1/2 cup sugar
  • 1 teaspoon salt
  • 2 cups crushed pineapple, not drained
  • 2 - large eggs
  • 2 teaspoons baking soda
  • FROSTING:
  • 1 - stick butter
  • 1 - small can evaporated milk
  • 1/2 teaspoon vanilla extract
  • 2/3 cup sugar
  • 1/2 cup flaked coconut
  • 1/2 cup pecans, in pieces

How To Make pineapple cake

  • Step 1
    Mix all the cake ingredients with spoon -- do not beat. Bake in a greased and floured 13 x 9 pan for 35-40 minutes at 350 or in two 9-inch cake pans.
  • Step 2
    For the frosting, place the butter, milk, vanilla and sugar in a saucepan and cook until thick, about 10 minutes or so. Add coconut and nuts. Cook 5 more minutes.
  • Step 3
    Pour over cake 5 minutes after taking it from the oven.
