Ingredients

  • CAKE:

  • 2 c
    all purpose flour
  • 1-1/2 c
    sugar
  • 1 tsp
    salt
  • 2 c
    crushed pineapple, not drained
  • 2
    large eggs
  • 2 tsp
    baking soda
  • FROSTING:

  • 1
    stick butter
  • 1
    small can evaporated milk
  • 1/2 tsp
    vanilla extract
  • 2/3 c
    sugar
  • 1/2 c
    flaked coconut
  • 1/2 c
    pecans, in pieces

How to Make PINEAPPLE CAKE

Step-by-Step

  1. Mix all the cake ingredients with spoon -- do not beat. Bake in a greased and floured 13 x 9 pan for 35-40 minutes at 350 or in two 9-inch cake pans.
  2. For the frosting, place the butter, milk, vanilla and sugar in a saucepan and cook until thick, about 10 minutes or so. Add coconut and nuts. Cook 5 more minutes.
  3. Pour over cake 5 minutes after taking it from the oven.
