My co-workers always ask for this cake when we are having a pitch-in. I have even made it for some of them to take to their own family gatherings. They say "if I buy the ingredients, will you make the pineapple cake for me?". Really good!!

Ingredients

  • 1/2 c
    finely chopped pecans
  • 1 small
    box of vanilla instant pudding mix
  • 1 pkg
    yellow cake mix
  • 1 c
    pineapple juice
  • 1/2 c
    vegetable oil
  • 4
    eggs
  • SAUCE

  • 1 c
    granulated sugar
  • 1 stick
    butter, i use real butter for this
  • 1/2 c
    pineapple juice

How to Make Pineapple Bundt Cake

Step-by-Step

  1. Grease a bundt pan well.
  2. Sprinkle chopped pecans on bottom of pan
  3. Mix together the pudding, cake mix, pineapple juice, oil, and eggs.
  4. Beat with electric mixer for two minutes.
  5. Pour over pecans in pan.
  6. Bake at 325 degrees for 50-60 minutes
  7. About 10 minutes before cake in done, make sauce.
  8. Mix sugar, pineapple juice and butter in a small pan.
  9. Heat until boiling and boil for two minutes.
  10. Remove cake from oven when done.
  11. DO NOT REMOVE CAKE FROM PAN
  12. Pour sauce mixture over cake and let it set for 1/2 hour.
  13. Put cake in refridgerator for one hour, them turn out onto serving plate.
