Ingredients
- CAKE INGREDIENTS
- 2 1/3 cups all purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup butter ( 2 sticks )
- 1 cup sugar
- 3 - eggs
- 1 teaspoon coconut extract
- 1 teaspoon rum extract
- 2 tablespoons fresh lime juice
- 8 ounces crushed pineapple with juice
- 1/4 cup milk
- 1/2 cup flaked coconut
- ICING INGREDIENTS
- 8 ounces pkg cream cheese ( good brand )
- 1/2 teaspoon rum extract
- 4 cups powdered sugar
- 1/2 cup flaked coconut (garnish for top of cupcakes)
How To Make pina colada cupcakes

Step 1Pre-heat oven to 350*F.Line muffin pan with paper baking cups and spray with cooking spray.In a medium bowl mix flour,baking powder,salt together and set aside.

Step 2In a large mixing bowl with electric mixer or a stand mixer on medium speed cream butter 30 seconds or so;then slowly add sugar and mix about 2 minutes more after the sugar is in.Add eggs 1 at a time.add flavorings,milk,pineapple and coconut.Slowly add flour mixture til smoothe about 30 seconds.

Step 3Spoon batter into baking cups. Bake 22 to 25 minutes. Test to see if are done with with toothpick.

Step 4For icing; Cream softened cheese and rum extract with electric hand mixer.Gradually add powdered sugar to the mixture.Ice cupcakes and garnish with coconut flakes.
