I WAS WORKING AT THE POST OFFICE AND A CO-WORKER MADE THE COMMENT THAT HE WANTED SOME FORM OF COCONUT CAKE MADE FOR THE RETIREMENT OF A CO-WORKER THE DAY AFTER HE RETIRED, IT WAS AN ON GOING JOKE BETWEEN THE TWO FOR 18 YRS, SO HE ASKED ME TO MAKE ONE, I SUGGESTED THIS CAKE, ITS SO DELISH, HOPE YOU ENJOY IT AS MUCH AS WE DID.

Ingredients

  • 1 box yellow cake mix
  • 15 ounces coconut milk, unsweetened
  • 1 can sweetened condensed milk
  • 1 can crushed pineapple, drained
  • 8 ounces cool whip
  • small package sweetened coconut
  • 1 cup pecan chips

How To Make pina colada cake

  • Step 1
    make cake according to directions
  • Step 2
    while cake is baking place coconut and condenced milk in a bowl and mix well...set to side
  • Step 3
    when cake is done, take a wooden spoon and poke holes all over the cake
  • Step 4
    pour milk mixture over cake. i only use about half, i dont like a soggy cake,but hey, its your cake, go a little or go alot.
  • Step 5
    take pineapple and spoon out over top adding a little of the juice as well. let cake completely cool
  • Step 6
    mix coolwhip and as much coconut as you want together, and keep in fridge. in a small skillet toast some of the coconut for color. set aside
  • Step 7
    when cake is completely cooled, top with cool whip mixture (making waves to hold the toasted coconut and pecans), sprinkle with toasted coconut and pour on the pecans. let sit in fridge over night,
