I enjoy serving this cake when we have cookouts on the weekends. Our friends really like this one. But my gal pals like this one equally when we're having a girls night out. A definite adult tasting cake.

Ingredients

  • ·
    1 box pineapple cake mix
  • ·
    1 8oz. can crushed pineapple with juice
  • ·
    3/4 cup water
  • ·
    1/3 cup vegetable oil
  • ·
    3 eggs beaten
  • ·
    1 teaspoons rum extract
  • ICING

  • ·
    2 envelopes dream whip dry mix
  • ·
    2 instant coconut pudding mixes
  • ·
    1 1/4 cup milk
  • ·
    1 teaspoon rum extract
  • ·
    1 drop yellow food coloring
  • ·
    2 cups sweetened coconut (toast, if you want)

How to Make PINA COLADA CAKE

Step-by-Step

  1. In large bowl, mix cake mix, pineapple, water, oil, eggs and rum extract until well blended. Pour in two greased 8 or 9 inch round cake pans OR 1 greased 9x13 baking pan. Bake 350 degrees according to cake mix box directions. Cool.
  2. In another bowl, Beat together Dream Whip dry mix, pudding dry mix, 1 1/4 cup milk and rum extract. Beat until blended. Add 1 drop of yellow food coloring. Mix until blended. Let sit for a few minutes and the frosting will thicken.
  3. NOTE: If you are using 2 round cake pans, put the first cake layer bottom side up on your serving tray. Spread a layer of frosting on it. Place the other cake layer bottom side down. Frost the entire cake. Sprinkle all over with coconut. If using a 9x13 just frost the top and sprinkle with coconut.
