I enjoy serving this cake when we have cookouts on the weekends. Our friends really like this one. But my gal pals like this one equally when we're having a girls night out. A definite adult tasting cake.

Ingredients
- - 1 box pineapple cake mix
- - 1 8oz. can crushed pineapple with juice
- - 3/4 cup water
- - 1/3 cup vegetable oil
- - 3 eggs beaten
- - 1 teaspoons rum extract
- ICING
- - 2 envelopes dream whip dry mix
- - 2 instant coconut pudding mixes
- - 1 1/4 cup milk
- - 1 teaspoon rum extract
- - 1 drop yellow food coloring
- - 2 cups sweetened coconut (toast, if you want)
How To Make pina colada cake

Step 1In large bowl, mix cake mix, pineapple, water, oil, eggs and rum extract until well blended. Pour in two greased 8 or 9 inch round cake pans OR 1 greased 9x13 baking pan. Bake 350 degrees according to cake mix box directions. Cool.

Step 2In another bowl, Beat together Dream Whip dry mix, pudding dry mix, 1 1/4 cup milk and rum extract. Beat until blended. Add 1 drop of yellow food coloring. Mix until blended. Let sit for a few minutes and the frosting will thicken.

Step 3NOTE: If you are using 2 round cake pans, put the first cake layer bottom side up on your serving tray. Spread a layer of frosting on it. Place the other cake layer bottom side down. Frost the entire cake. Sprinkle all over with coconut. If using a 9x13 just frost the top and sprinkle with coconut.
