perfect pumpkin bars

I have made Christmas boxes of goodies and candies since I was about 20 years old, so, about 50 years now. This is one of my favorites to put in it.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1 cup canola oil
  • 1 can pumpkin (2 cups, 16 oz)
  • 4 large eggs
  • 1 cup walnuts, chopped coarsely
  • FROSTING
  • 2 cups powdered sugar
  • 1/3 cup butter, softened
  • 3 ounces cream cheese, softened
  • 1 tablespoon milk
  • 1 teaspoon vanilla

How To Make perfect pumpkin bars

  • Step 1
    Heat oven to 350°.
  • Step 2
    Grease 15x10x1" baking pan.
  • Step 3
    In large bowl, combine all bar ingredients; beat at low speed until moistened. Beat 2 minutes at medium speed.
  • Step 4
    Pour into greased pan.
  • Step 5
    Bake at 350° for 25-30 minutesor until toothpick inserted in center comes out clean.
  • Step 6
    Cool completely.
  • Step 7
    In small bowl, combine all frosting ingredients; beat until smooth. Frost cooled bars. Cut into bars. Store in fridge.
  • Step 8
    Sprinkle the top lightly with some nutmeg , cloves & cinnamon mixed, for color. It won't take much, so don't over-do it.
  • Step 9
    Note: Sometimes I make these thicker like a cake, as above. May need 2 batches to accomplish this.
