I have made Christmas boxes of goodies & candies for about 30 years & this is one of my favorites to put in it.

Ingredients

  • 2 c
    all purpose flour
  • 2 c
    sugar
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 1/2 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1/2 tsp
    salt
  • 1/2 tsp
    ground cloves
  • 1 c
    canola oil
  • 1 (16 oz.) can(s)
    pumpkin (2 cups)
  • 4
    eggs
  • FROSTING

  • 2 c
    powdered sugar
  • 1/3 c
    butter, softened
  • 1 (3 oz. ) pkg
    cream cheese, softened
  • 1 Tbsp
    milk
  • 1 tsp
    vanilla

How to Make PERFECT PUMPKIN BARS

Step-by-Step

  1. Heat oven to 350°.
  2. Grease 15x10x1" baking pan.
  3. In large bowl, combine all bar ingredients; beat at low speed until moistened. Beat 2 minutes at medium speed.
  4. Pour into greased pan.
  5. Bake at 350° for 25-30 minutesor until toothpick inserted in center comes out clean.
  6. Cool completely.
  7. In small bowl, combine all frosting ingredients; beat until smooth. Frost cooled bars. Cut into bars. Store in fridge.
  8. Sprinkle the top lightly with some nutmeg , cloves & cinnamon mixed, for color. It won't take much, so don't over-do it.
  9. Note: Sometimes I make these thicker like a cake, as above. May need 2 batches to accomplish this.
