perfect pumpkin bars

My mom has had this recipe forever and now that I'm a mom, they are always requested by my husband, kids, and inlaws around the holidays!

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 - eggs (room temp)
  • 1 can pumpkin (15 oz)
  • 1 2/3 cups sugar
  • 1 cup vegetable oil
  • CREAM CHEESE FROSTING (I ALWAYS DOUBLE IT!)
  • 1- 8 ounce packages cream cheese softened
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla
  • 2 cups powdered sugar

How To Make perfect pumpkin bars

  • Step 1
    Mix flour, baking soda, baking powder, salt and cinnamon and set aside.
  • Step 2
    Beat sugar, pumpkin, oil, and eggs until well incorporated.
  • Step 3
    Gradually add dry ingredients into pumpkin mixture until fully incorporated.
  • Step 4
    Pour mixture into an ungreased 15x10x1 pan and bake at 350 degrees for 25-30 minutes. Let cool completely before frosting.
  • Step 5
    For the cream cheese frosting: Beat together butter, cream cheese, vanilla until incorporated. Gradually add powdered sugar, and taste as you go. I like my frosting a little less sweet so I end up using less than the full amount of powdered sugar. Once frosted, I garnish with cinnamon on top. Enjoy! (I died the frosting orange in the picture for Halloween and topped with fresh ground cinnamon)
