peppermint loaf cake
This pepprminty cake is perfect for the Holiday Season. Easy to make. Makes 2 loaf cakes. One to eat and one to share.

Ingredients
- 1 box white cake mix
- 1 box vanilla instant pudding
- 1/2 cup vegetable oil
- 1 cup cold water
- 1/2 teaspoon peppermint extract
- 5 eggs whites
- red food coloring
- GLAZE
- 1 1/2 cups confectioners' sugar
- 1/2 teaspoon peppermint extract
- 2 - 3 tablespoons water
- red food coloring
- crushed peppermint candy
How To Make peppermint loaf cake

Step 1Preheat oven to 350 degrees.

Step 2Grease and flour 2 loaf pans and set aside.

Step 3Place cake mix, pudding, oil, water, extract and egg whites in a large mixing bowl.

Step 4Beat four minutes. The batter will be thick.

Step 5Place about 2 cups of the batter into a small mixing bowl. Add red food coloring and mix well. (How much food coloring you add will depend on how red you want the batter to be. It will vary with the type of food coloring you use.)

Step 6Divide the white batter between the two pans. Next, add the red batter on top of the white.

Step 7Using a knife, swirl the two batters together for a marbled effect.

Step 8Bake 40-45 minutes. until done.

Step 9Remove cakes from oven and cool 5 minutes on a rack.

Step 10While cakes are cooling, prepare the glaze.

Step 11Glaze: Place the confectioners' sugar in a medium mixing bowl. Add extract and 2 tablespoons of water. Add red food coloring, if desired. Mix well.

Step 12Remove cakes from pan, place on a rack. While still warm spoon glaze over the cakes.

Step 13Sprinkle with crushed peppermint candy.
