peppermint cupcakes
This is a recipe off my Kitchen Towel..and I was asked by another JAP member if I would post this recipe so she could see it better...so here it is. Enjoy!!! I have no idea who to give credit to for this recipe as there is no name on the kitchen towel... **(this is not my original recipe, BUT, it is my towel and the photo was taken by ME)**

Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt (i use sea salt)
- 1/2 cup whole milk
- 1 teaspoon vanilla extract (i use my homemade vanilla)
- 1 teaspoon peppermint extract
- 1/2 cup unsalted butter
- 1 cup sugar (i use stevia, splenda or truvia)
- 1 large egg
- 2 - egg whites
How To Make peppermint cupcakes

Step 1Whisk together flour, baking powder and salt; set aside.

Step 2Cream butter with mixer until light and fluffy.

Step 3Slowly add sugar.

Step 4Add egg and egg whites until blended.

Step 5Add half the flour mixture; mix until just blended.

Step 6Add milk mixture; mix until just blended.

Step 7Slowly add remaining flour mixture.

Step 8Pour evenly into paper-lined muffin tins.

Step 9Bake for approx. 25 minutes.

Step 10Transfer to wire rack and let cupcakes cool before icing.

Step 11NOTE by CinStraw: I frost these with a peppermint flavored glaze and top (garnish) with crushed peppermint candy. ALSO THE RECIPE ON THE TOWEL DOES NOT GIVE AN OVEN TEMPERATURE TO BAKE THESE CUPCAKES....SO, I'M ADDING THAT YOU BAKE IN A "PREHEATED 350°F OVEN".
