This is a recipe off my Kitchen Towel..and I was asked by another JAP member if I would post this recipe so she could see it better...so here it is. Enjoy!!!

I have no idea who to give credit to for this recipe as there is no name on the kitchen towel...

Ingredients

  • 1 1/2 c
    all-purpose flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt (i use sea salt)
  • 1/2 c
    whole milk
  • 1 tsp
    vanilla extract (i use my homemade vanilla)
  • 1 tsp
    peppermint extract
  • 1/2 c
    unsalted butter
  • 1 c
    sugar (i use stevia, splenda or truvia)
  • 1 large
    egg
  • 2
    egg whites

How to Make Peppermint Cupcakes

Step-by-Step

  1. Whisk together flour, baking powder and salt; set aside.
  2. Cream butter with mixer until light and fluffy.
  3. Slowly add sugar.
  4. Add egg and egg whites until blended.
  5. Add half the flour mixture; mix until just blended.
  6. Add milk mixture; mix until just blended.
  7. Slowly add remaining flour mixture.
  8. Pour evenly into paper-lined muffin tins.
  9. Bake for approx. 25 minutes.
  10. Transfer to wire rack and let cupcakes cool before icing.
  11. NOTE by CinStraw:
    I frost these with a peppermint flavored glaze and top (garnish) with crushed peppermint candy.

    ALSO THE RECIPE ON THE TOWEL DOES NOT GIVE AN OVEN TEMPERATURE TO BAKE THESE CUPCAKES....SO, I'M ADDING THAT YOU BAKE IN A "PREHEATED 350°F OVEN".
