This cake is fluffy, tasty and tender cake, with pecan pie topping. Its a big hit at my house!

Ingredients For pecan upside down cake

  • 1/2 c
    butter, cubed into small pieces
  • 1/2 c
    brown sugar, firmly packed
  • 1/4 c
    light corn syrup
  • 1/4 tsp
    salt
  • 1 c
    chopped pecans
  • TOPPING ^^^
  • CAKE
  • 1 2/3 c
    ap flour
  • 3/4 c
    sugar
  • 3/4 tsp
    salt
  • 1 tsp
    vanilla extract
  • 2 lg
    eggs
  • 3/4-1 c
    buttermilk
  • 6 Tbsp
    melted butter
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda

How To Make pecan upside down cake

    Preheat oven to 350. TOPPING: Spray 10" cast iron skillet with cooking spray. Add pecans, brown sugar, corn syrup and salt. Cook on top of stove till sugar is melted. Take off stove and make cake batter.

    Cake: mix all ingredients till smooth, pour carefully onto pecan mixture and bake 20-25 minutes, till top is golden brown and a toothpick comes out clean. Let it cool for about 10 minutes then invert onto serving dish.
