pecan pie muffins
I know this recipe has been around for a long time and I don't even remember where it came from. I just know that it has been in my recipe box for years and I had forgotten about it. Then a facebook friend of mine reminded me of it and I decided that I would post it. The picture is from her posting also. I remember these being so delicious and easy. I know my grandaughters will love making these.

Makes @ 2 1/2 dozen mini-muffins
Ingredients
- 1 cup light brown sugar
- 2 large eggs
- 2/3 cup softened butter
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
How To Make pecan pie muffins

Step 1Preheat oven to 350F.

Step 2Grease a muffin pan (a miniature pan works best).

Step 3Mix together the brown sugar, eggs and butter.

Step 4Then add flour and nuts.

Step 5Mix by hand...with a whisk or large spoon.

Step 6Pour the mixture into the muffin pan until each muffin cup is 3/4 full.

Step 7Bake 20-25 minutes for regular size muffins, less time for miniatures.

Step 8Made @2 dozen miniatures.
