pear pudding cake

This cake recipe was given to me when I was cooking for the High School in Stayton, Ore. The original recipe served 96 portions and was baked into two 18" x 26" x 2" pans. I thought it was so good that I sized it down to a 9 x 13 pan and cut it 4 x 6 and it serves 24 portions. I'm going to try and put a picture of the original recipe so you can see what it was.

Ingredients

  • 3 cups canned pears chopped
  • 2 cups sugar
  • 2/3 cup shortening ( i added a tablespoon of oil)
  • 3 - eggs
  • 3 cups sifted flour
  • 1-1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2-3/4 teaspoon alllspice
  • 1/2 - 3/4 teaspoons cloves
  • 1 teaspoon cinnamon
  • BUTTER SAUCE
  • 7/8 cup sugar (almost 1 cup )
  • 3/4 cup butter
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • - blend all ingredients. cook on medium heat about 5 min. remove and add vanilla. spoon over each serving of cake.

How To Make pear pudding cake

  • Step 1
    Turn oven on 350* Cream sugar and shortening with the 1 tablespoon of oil. Add eggs, mix until smooth. The dough will be thick, but will thin out when you add the pears.
  • Step 2
    In a medium bowl combine the flour, soda, salt, allspice, cloves and cinnamon. Add to creamed mixture and blend well. Fold in pears.
  • Step 3
    Pour into greased and floured 9 x 13 baking pan. Bake at 350* for 25-35 min or until done. Cool:
