This recipe was created for my sister's birthday by combining some of her favorite things...vanilla cake and peanut butter cups...then topped with peanut butter frosting.

CAKE BATTER

1 c
sugar
1/2 c
butter, softened
2
eggs
2 tsp
vanilla extract
1 1/2 c
flour
1 3/4 tsp
baking powder
1/2 c
milk
12
mini peanut butter cups, chilled and unwrapped

FROSTING

1/2 c
butter, softened
1 c
creamy peanut butter
3 Tbsp
milk
2 c
powdered sugar

How to Make Peanut Butter Cup-cakes

Step-by-Step

  • 1Preheat oven to 350 degrees. Line cupcake tins with paper liners.
  • 2CAKE BATTER: Cream together butter and sugar. Beat in eggs; stir in vanilla. Add flour and baking powder until well mixed. Stir in milk until smooth. Fill cupcake liners 2/3 full with batter. Press one peanut butter cup into each cupcake. Bake for 20-25 minutes. Cool completely before frosting.
  • 3FROSTING: Cream butter and peanut butter. Add sugar until combined. Stir in milk as needed until smooth. Frost cooled cupcakes and decorate as desired.
