peachy keen angel cake w/orange frosting

It was 7:30pm on a Saturday night after a long day of working outside. i needed a couple items for a Missions Bake Sale..so i went to my pantry..Angel Food cake mix..sugar free peach jello..a can of peaches w/no sugar added..and Simply Orange in the frig..it was a go =)

Ingredients

  • CAKE
  • 1 package angel food cake mix
  • 1 package peach jello [small] [i only had sugar free on hand, but that didn't seem to slow anyone down from trying it.]
  • 1 can 15oz peaches [remove peaches from liquid reserve] puree peaches use juice to make 1 1/4 c of liquid
  • FROSTING
  • 1 cup powdered sugar
  • 1 - orange zested
  • 2 tablespoons orange juice [i still use simply orange for the flavor]

How To Make peachy keen angel cake w/orange frosting

  • Step 1
    Put the oven rack in the lowest position. Preheat oven to 350.
  • Step 2
    Empty mix in bowl, add peach jello, pureed peaches Mix according to package directions.
  • Step 3
    Pour into angel food pan. Bake according to package. 35 min. Cool upside down on a bottle until completely cooled. Remove cake from pan w/a fillet or boning knife carefully.
  • Step 4
    Measure 1 c of powdered sugar in a 2 cup measuring cup, add 2 tbs. of orange juice and orange zest, mix thoroughly, drizzle over the top of the cake allowing some of the frosting to drip down the sides. Whaa Laa you have a sure winner for a bake sale and it went fairly fast =)
