peachy keen angel cake w/orange frosting

It was 7:30pm on a Saturday night after a long day of working outside. i needed a couple items for a Missions Bake Sale..so i went to my pantry..Angel Food cake mix..sugar free peach jello..a can of peaches w/no sugar added..and Simply Orange in the frig..it was a go =)

Ingredients For peachy keen angel cake w/orange frosting

  • CAKE
  • 1 pkg
    angel food cake mix
  • 1 pkg
    peach jello [small] [i only had sugar free on hand, but that didn't seem to slow anyone down from trying it.]
  • 1 can
    15oz peaches [remove peaches from liquid reserve] puree peaches use juice to make 1 1/4 c of liquid
  • FROSTING
  • 1 c
    powdered sugar
  • 1
    orange zested
  • 2 Tbsp
    orange juice [i still use simply orange for the flavor]

How To Make peachy keen angel cake w/orange frosting

    Put the oven rack in the lowest position. Preheat oven to 350.

    Empty mix in bowl, add peach jello, pureed peaches Mix according to package directions.

    Pour into angel food pan. Bake according to package. 35 min. Cool upside down on a bottle until completely cooled. Remove cake from pan w/a fillet or boning knife carefully.

    Measure 1 c of powdered sugar in a 2 cup measuring cup, add 2 tbs. of orange juice and orange zest, mix thoroughly, drizzle over the top of the cake allowing some of the frosting to drip down the sides. Whaa Laa you have a sure winner for a bake sale and it went fairly fast =)
