When I worked at the school, we had a potluck breakfast once a month. I took this cake and everyone raved over it and none was left. I have searched and searched for this recipe and finally found it today. Actually I bought the peaches yesterday and thought if I didn't find it I'd wing it on my own and try to rediscover it. Found it today and will be making it again soon so I can supply a picture. Believe me, this is a great cakr to make because of the yeast in the recipe.

  • 1 3/4 c
    unsifted flour
  • 3/4 c
  • 1/2 tsp
  • 1 Tbsp
    dry yeast
  • 2 Tbsp
    margarine, softened
  • 1/2 c
    hot tap water
  • 1
    egg at room temperature
  • 1/4 c
    brown sugar
  • 1/2 tsp
  • 1/4 tsp
  • 2 Tbsp
  • 1 can(s)
    16 oz. drained sliced peaches
  • ·
    confectioners sugar frosting

How to Make Peaches N Crumb Cake


  1. Combine 1/2 cup flour, sugar,salt and undissolved yeast.
  2. Add 2 tablespoons softened margarine and hot tap water to dry ingredients. Beat 2 minutes at medium speed, scrape sides often
  3. Add egg and 1/2 cup flour, beat on high 2 minutes
  4. stir in 1/2 cup flour to make stiff batter
  5. spread in 9" greased baking pan.
  6. Combine remaining 1/4 cup flour, brown sugar, cinnamon, nutmeg and cut in 2 tablespoons margarine until crumbly. Sprinkle over cake
  7. Arrange peach slices over top
  8. Cover and let rise 1 hour or until doubled in draft free, warm place.
  9. Bake 400 degrees 25 minutes or until done.
    Cool in pan 10 minutes, then turn onto wire rack or serving platter ( I kept mine in baking dish)
  10. Drizzle with confectioners sugar frosting.
