Ingredients

1 c
flour
3/4 c
dark brown sugar
1 Tbsp
baking powder
1 pinch
salt
1
egg
1 tsp
dark molasses
1 Tbsp
vanilla
1/2 c
shortening
1 tsp
cinnamon
1 tsp
ginger
1/8 tsp
clove
1/8 tsp
nutmeg
1/2 c
mash potato or flakes
1 c
milk
1/2 c
applesauce
1/2 c
cherries, stoned and halved
1/2 c
peach preserves
2 Tbsp
water

How to Make Peach Preserves and Tart Cherry Mash Potato Cake

Step-by-Step

  • 1In a mixing bowl, beat egg, shortening, and sugar on high for about 3 minutes.
  • 2Add spices, salt, and vanilla. Beat once more.
  • 3Add applesauce and mash potatoes or flakes. Mix.
  • 4Add in thirds, alternating flour and milk. Mixing in between each addition.
  • 5Fold in cherries (tossed in flour).
  • 6Pour in a small, greased square pan.
  • 7In a bowl, mix water and preserves.
  • 8Spoon onto batter. Take a spatula and gently swirl.
  • 9Place in oven of 325F.
  • 10Bake until center is loosely set.
  • 11Allow to cool for 10 minutes before inverting on a second plate, then onto serving plate. That way peach swirl is on top.
  • 12Cut into small squares and serve.
