1Peel and chop peaches, stir in lemon juice and set aside.
2In a large bowl combine dry ingredients.
3In another bowl, combine eggs, milk, oil and flavorings.
4Add wet ingredients to the dry ingredients just combined. The batter will be thick.
5Fold in the peaches, pecans and coconut
6Pour into a greased loaf pan and bake at 350 degrees for 1 hour or until inserted toothpick comes out clean.
Allow to cool in pan for a few minutes before turning out on a rack to cool completely before slicing.
