Ingredients

  • 1/2 cup uncooked oats
  • 2 tablespoons flour
  • 1/2 cup brown sugar, firmly packed
  • 1/2 teaspoon cinnamon
  • 3 tablespoons butter, cut up
  • 1/2 cup chopped pecans
  • 3/4 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons butter, softened
  • 2/3 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 pint sour cream
  • 1/4 pound peaches, peeled, cut in 1" chunks (2 cups)

How To Make peach coffee cake

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Grease 9\" square baking pan.
  • Step 3
    Make streusel: Combine oats, flour, brown sugar and cinnamon in medium bowl.
  • Step 4
    With pasty blender or 2 knives, cut in butter until mixture resembles coarse crumbs.
  • Step 5
    Stir in pecans.
  • Step 6
    Combine flour, baking powder, baking soda and salt in medium bowl.
  • Step 7
    Beat butter and sugar in mixer bowl at medium speed until light and fluffy.
  • Step 8
    Beat in eggs one at a time, then add vanilla.
  • Step 9
    Add sour cream alternately with dry ingredients, beginning and ending with dry ingredients; beat just until combined.
  • Step 10
    Spread batter in prepared pan.
  • Step 11
    Sprinkle evenly with half the streusel.
  • Step 12
    Spoon peaches on top; sprinkle with remaining streusel.
  • Step 13
    Bake 50-60 minutes, until toothpick inserted in center comes out clean.
  • Step 14
    Cool in pan on wire rack 30 minutes.
  • Step 15
    Sprinkle with confectioners\' sugar.
  • Step 16
    Serve warm or at room temperature.
