Ingredients

  • 2 c
    sugar
  • 1 1/2 c
    canola oil
  • 4 large
    eggs
  • 2 c
    all purpose flour
  • 3 c
    carrots, grated
  • 2 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/2 tsp
    allspice
  • 1/2 c
    pecans chopped
  • CREAM CHEESE FROSTING

  • 8 oz
    cream cheeese
  • 1/2 c
    butter, room temperature
  • 1 lb
    powdered sugar
  • 1 tsp
    vanilla extract pure

How to Make Pat's Carrot Spice Cake and Frosting

Step-by-Step

  1. Cream sugar, oil, and eggs.
    Add dry ingredients. mix until blended.
    Add carrots and nuts stir until mixed in.
  2. pour into a greased 9x13 pan.Bake at 300* for 30 to 40 minutes
  3. frosting; soften cream cheese and butter, add sugar and vanilla Beat beat beat, until fluffy and spreads easy.If too thick, I add a bit of milk. enjoy. thanks patty. xoxoxoxo
