  • 2 cups sugar
  • 1 1/2 cups canola oil
  • 4 large eggs
  • 2 cups all purpose flour
  • 3 cups carrots, grated
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 cup pecans chopped
  • CREAM CHEESE FROSTING
  • 8 ounces cream cheeese
  • 1/2 cup butter, room temperature
  • 1 pound powdered sugar
  • 1 teaspoon vanilla extract pure

How To Make pat's carrot spice cake and frosting

  • Step 1
    Cream sugar, oil, and eggs. Add dry ingredients. mix until blended. Add carrots and nuts stir until mixed in.
  • Step 2
    pour into a greased 9x13 pan.Bake at 300* for 30 to 40 minutes
  • Step 3
    frosting; soften cream cheese and butter, add sugar and vanilla Beat beat beat, until fluffy and spreads easy.If too thick, I add a bit of milk. enjoy. thanks patty. xoxoxoxo
