    eggs

    vegetable oil
  • 1 c
    granulated sugar
  • 1 tsp
    baking soda
  • 1 tsp
    ground ginger
  • 1 tsp
    ground cardamom
  • 1 tsp
    salt
  • 2 tsp
    ground cloves
  • 2 c
    grated parsnips
  • 1 c
    all-purpose flour
  • FROSTING
  • 6 Tbsp
    butter, softened
  • 8 oz
    cream cheese, softened
  • 1 tsp
    vanilla extract
  • 2 tsp
    lemon juice
  • 1 c
    powdered sugar

How To Make parsnip spice cupcakes

    Preheat oven to 350 degrees F. Grease 2 12-cup cupcake pans.

    Beat the first 8 ingredients together in a large bowl.

    Stir in the parsnips and flour.

    Pour in the prepared pans and bake for 20 minutes. Let cool completely.

    For the frosting beat all ingredients together. Frost the cooled cupcakes.
