Ingredients

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cardamom
  • 1 teaspoon salt
  • 2 teaspoons ground cloves
  • 2 cups grated parsnips
  • 1 cup all-purpose flour
  • FROSTING
  • 6 tablespoons butter, softened
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • 1 cup powdered sugar

How To Make parsnip spice cupcakes

  • Step 1
    Preheat oven to 350 degrees F. Grease 2 12-cup cupcake pans.
  • Step 2
    Beat the first 8 ingredients together in a large bowl.
  • Step 3
    Stir in the parsnips and flour.
  • Step 4
    Pour in the prepared pans and bake for 20 minutes. Let cool completely.
  • Step 5
    For the frosting beat all ingredients together. Frost the cooled cupcakes.
