This is a delicious and moist coffecake. Letting it sit overnight lets all the flavors meld together real good.

Ingredients

  • 3/4 cup softened butter
  • 1 cup sugar
  • 2 large eggs
  • 1 cup lite sour cream
  • 1-1/2 cup flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon nutmeg
  • 3/4 cup packed light brown sugar
  • 1/2 cup chopped pecans
  • 1 teaspoon cinnamon

How To Make overnight coffecake

  • Step 1
    In lg bowl, cream butter and sugar until fluffy. Beat in eggs and sour cream. In another bowl, combine flours, baking powder, baking soda, salt and nutmeg. Add to butter mix. Mix well.
  • Step 2
    Spray a bundt pan w/ cooking spray. Pour batter into pan. In bowl, combine brown sugar, pecans and cinnamon. Sprinkle 1/2 the mix over batter. Swirl mix through batter.
  • Step 3
    Sprinkle remaining mix over batter. Cover cake and chill overnight. The next day, heat oven to 350. Bake cake for 35-45 min, or until a toothpick inserted in center comes out clean.
