How to Make Orange Cheesecake Bars

Step-by-Step

  1. For crust, in a medium mixing bowl stir together the vanilla wafer crumbs and melted butter. Set aside one quarter of the crumb mixture. Press remaining mixture evenly into the bottom of a 13x9x2” baking pan. Bake in a preheated 350*F oven for 15 minutes.
  2. For lining, in another mixing bowl, beat cream cheese with an electric mixer on medium-high speed for 30 seconds. Add eggs one at a time beating well after each addition. Beat in sugar, orange juice, and orange peel till combined. Do not over beat. Spread cream cheese mixture evenly over crust.
  3. Sprinkle with reserved crumb mixture. Bake in the 350*F oven for 30-35 minutes, or until center appears set. Cool in pan on a rack. Cut into bars; cover and store in the refrigerator.
