My mother-in-law‘s applesauce cake became a pumpkin cake. I used pumpkin instead of applesauce. I added apples, nuts, raisins, and pumpkin spice to bring it together. I topped it off with a brown butter icing. The sweet icing finished the cake off well. The cake goes well with ice cream, or a cup of coffee or tea. My husband gave it a thumbs up.

Ingredients

  • 21/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 11/2 teaspoons baking soda
  • 1 tablespoon pumpkin spice
  • 11/4 cups light brown sugar packed
  • 1 cup granulated sugar
  • 1 1/4 cups canned natural unsweetened pumpkin
  • 1/4 cup applesauce
  • 2 large eggs
  • 1/4 cup canola oil
  • 1/4 cup melted butter, cooled
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 2 cups chopped apples
  • 1/2 cup nuts of choice (I used walnuts)
  • 1/2 cup raisins
  • BROWN BUTTER ICING
  • 1/2 cup butter
  • 1 3/4 cups powdered sugar
  • 2 tablespoons maple syrup
  • 1/4 cup milk
  • 1 teaspoon vanilla extract or maple use 1/2 tsp if using maple extract

How To Make one bowl pumpkin apple bundt cake with maple icing

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Grease and flour a Bundt pan.
  • Step 3
    In a large bowl, whisk flour, sugars, pumpkin spice, baking powder, baking soda, and salt until well combined.
  • Step 4
    Add in the pumpkin, applesauce, eggs, oil, butter, milk, and vanilla extract. Mix well.
  • Step 5
    Mix in the apples, nuts, and raisins.
  • Step 6
    Spoon batter evenly into the greased and floured Bundt pan. Make sure the batter is level.
  • Step 7
    Place the Bundt pan on top of a sheet pan. Bake in a 350-degree oven for about 1 hour or until a toothpick comes out clean.

    Cool on a rack about 20 minutes.
  • Step 9
    Turn the cake carefully over onto the rack to cool completely.
  • Step 10
    Make icing. In a saucepan, brown butter over medium heat. Cook until the butter browns on the bottom of the pan. Cook about 3 minutes, stirring occasionally. Cool butter.

    Mix all ingredients with butter together.
  • Step 12
    Spoon over the cake. Let the icing set before serving.
