one bowl pumpkin apple bundt cake with maple icing
My mother-in-law‘s applesauce cake became a pumpkin cake. I used pumpkin instead of applesauce. I added apples, nuts, raisins, and pumpkin spice to bring it together. I topped it off with a brown butter icing. The sweet icing finished the cake off well. The cake goes well with ice cream, or a cup of coffee or tea. My husband gave it a thumbs up.

Ingredients
- 21/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 11/2 teaspoons baking soda
- 1 tablespoon pumpkin spice
- 11/4 cups light brown sugar packed
- 1 cup granulated sugar
- 1 1/4 cups canned natural unsweetened pumpkin
- 1/4 cup applesauce
- 2 large eggs
- 1/4 cup canola oil
- 1/4 cup melted butter, cooled
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 2 cups chopped apples
- 1/2 cup nuts of choice (I used walnuts)
- 1/2 cup raisins
- BROWN BUTTER ICING
- 1/2 cup butter
- 1 3/4 cups powdered sugar
- 2 tablespoons maple syrup
- 1/4 cup milk
- 1 teaspoon vanilla extract or maple use 1/2 tsp if using maple extract
How To Make one bowl pumpkin apple bundt cake with maple icing

Step 1Preheat oven to 350 degrees F.

Step 2Grease and flour a Bundt pan.

Step 3In a large bowl, whisk flour, sugars, pumpkin spice, baking powder, baking soda, and salt until well combined.

Step 4Add in the pumpkin, applesauce, eggs, oil, butter, milk, and vanilla extract. Mix well.

Step 5Mix in the apples, nuts, and raisins.

Step 6Spoon batter evenly into the greased and floured Bundt pan. Make sure the batter is level.

Step 7Place the Bundt pan on top of a sheet pan. Bake in a 350-degree oven for about 1 hour or until a toothpick comes out clean.

Step 8Cool on a rack about 20 minutes.

Step 9Turn the cake carefully over onto the rack to cool completely.

Step 10Make icing. In a saucepan, brown butter over medium heat. Cook until the butter browns on the bottom of the pan. Cook about 3 minutes, stirring occasionally. Cool butter.

Step 11Mix all ingredients with butter together.

Step 12Spoon over the cake. Let the icing set before serving.
