old fashioned carrot cake w/ cream cheese frosting

Struggled to find a good carrot cake recipe for years. Got this one from my mom, who got it from my aunt.

Ingredients

  • CARROT CAKE
  • 2 cups all purpose flour
  • 2 cups sugar
  • 1 1/2 teaspoons ground cinnamon
  • 3 teaspoons baking powder
  • 3 teaspoons baking soda
  • 4 - eggs
  • 1 cup vegetable oil
  • 4 cups shredded carrots
  • 1 1/2 cups pecans, in pieces
  • CREAM CHEESE FROSTING
  • 1 package 8 oz cream cheese, softened
  • 1 stick butter, softened
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract

How To Make old fashioned carrot cake w/ cream cheese frosting

  • Step 1
    Preheat oven to 375 degrees farenheit. Grease and flour 2 nine inch round cake pans, set aside.
  • Step 2
    For the cake: Combine all the dry ingredients in a large mixing bowl.
  • Step 3
    Add eggs and oil, mix well on low speed with hand mixer
  • Step 4
    Add carrots and pecans, fold into batter. (Note: Batter will be very thick)
  • Step 5
    Pour batter into prepared cake pans and bake 45 to 50 minutes, until browned on top and tooth pick comes out clean.
  • Step 6
    While cake is baking, prepare frosting. Cream butter and cream cheese on low-medium speed until well combined and fluffy. Add vanilla extract and combine.
  • Step 7
    Add powdered sugar, one cup at a time, be sure to fully incorporate each addition before adding the next. Scrape down sides of bowl as needed. Place frosting in fridge to cool.
