Ingredients
- CARROT CAKE
- 2 cups all purpose flour
- 2 cups sugar
- 1 1/2 teaspoons ground cinnamon
- 3 teaspoons baking powder
- 3 teaspoons baking soda
- 4 - eggs
- 1 cup vegetable oil
- 4 cups shredded carrots
- 1 1/2 cups pecans, in pieces
- CREAM CHEESE FROSTING
- 1 package 8 oz cream cheese, softened
- 1 stick butter, softened
- 4 cups powdered sugar, sifted
- 1 teaspoon vanilla extract
How To Make old fashioned carrot cake w/ cream cheese frosting

Step 1Preheat oven to 375 degrees farenheit. Grease and flour 2 nine inch round cake pans, set aside.

Step 2For the cake: Combine all the dry ingredients in a large mixing bowl.

Step 3Add eggs and oil, mix well on low speed with hand mixer

Step 4Add carrots and pecans, fold into batter. (Note: Batter will be very thick)

Step 5Pour batter into prepared cake pans and bake 45 to 50 minutes, until browned on top and tooth pick comes out clean.

Step 6While cake is baking, prepare frosting. Cream butter and cream cheese on low-medium speed until well combined and fluffy. Add vanilla extract and combine.

Step 7Add powdered sugar, one cup at a time, be sure to fully incorporate each addition before adding the next. Scrape down sides of bowl as needed. Place frosting in fridge to cool.
