Struggled to find a good carrot cake recipe for years. Got this one from my mom, who got it from my aunt.

  • 2 c
    all purpose flour
  • 2 c
  • 1 1/2 tsp
    ground cinnamon
  • 3 tsp
    baking powder
  • 3 tsp
    baking soda
  • 4
  • 1 c
    vegetable oil
  • 4 c
    shredded carrots
  • 1 1/2 c
    pecans, in pieces

  • 1 pkg
    8 oz cream cheese, softened
  • 1 stick
    butter, softened
  • 4 c
    powdered sugar, sifted
  • 1 tsp
    vanilla extract

How to Make Old Fashioned Carrot Cake w/ Cream Cheese Frosting


  1. Preheat oven to 375 degrees farenheit. Grease and flour 2 nine inch round cake pans, set aside.
  2. For the cake:
    Combine all the dry ingredients in a large mixing bowl.
  3. Add eggs and oil, mix well on low speed with hand mixer
  4. Add carrots and pecans, fold into batter.
    (Note: Batter will be very thick)
  5. Pour batter into prepared cake pans and bake 45 to 50 minutes, until browned on top and tooth pick comes out clean.
  6. While cake is baking, prepare frosting. Cream butter and cream cheese on low-medium speed until well combined and fluffy. Add vanilla extract and combine.
  7. Add powdered sugar, one cup at a time, be sure to fully incorporate each addition before adding the next. Scrape down sides of bowl as needed. Place frosting in fridge to cool.
