Struggled to find a good carrot cake recipe for years. Got this one from my mom, who got it from my aunt.

all purpose flour
2 c
1 1/2 tsp
ground cinnamon
3 tsp
baking powder
3 tsp
baking soda
1 c
vegetable oil
4 c
shredded carrots
1 1/2 c
pecans, in pieces


1 pkg
8 oz cream cheese, softened
1 stick
butter, softened
4 c
powdered sugar, sifted
1 tsp
vanilla extract

How to Make Old Fashioned Carrot Cake w/ Cream Cheese Frosting


  • 1Preheat oven to 375 degrees farenheit. Grease and flour 2 nine inch round cake pans, set aside.
  • 2For the cake:
    Combine all the dry ingredients in a large mixing bowl.
  • 3Add eggs and oil, mix well on low speed with hand mixer
  • 4Add carrots and pecans, fold into batter.
    (Note: Batter will be very thick)
  • 5Pour batter into prepared cake pans and bake 45 to 50 minutes, until browned on top and tooth pick comes out clean.
  • 6While cake is baking, prepare frosting. Cream butter and cream cheese on low-medium speed until well combined and fluffy. Add vanilla extract and combine.
  • 7Add powdered sugar, one cup at a time, be sure to fully incorporate each addition before adding the next. Scrape down sides of bowl as needed. Place frosting in fridge to cool.
