oh no!! another carrot cake recipe!!!

I looked at some of the recipes here and they all look good... BUT!! I think I will stick to this one. It's the best carrot cake I have ever had... hands down...ENJOY!! I appreciate that Marie made this and put a picture of it on here. I don't do anything but frost it... no decorations, so those are optional according to your artistic abilities!!! I have doubled this, but I think it works better in a smaller pan. If you need a bigger cake... make 2!!!

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1 cup cooked, mashed carrots, cooled to room temperature
  • 3/4 cup vegetable oil
  • 1 - 8 1/4 ounce can crushed pineapple, drained
  • 3 - eggs
  • 1 tablespoon hot water
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup raisins, soaked to plump (optional)
  • CREAM CHEESE ICING
  • 8 ounces cream cheese, softened
  • 1/2 cup butter, softened (real butter please!!)
  • 1 pound powdered sugar
  • 1 1/2 teaspoons vanilla (if desired.. i do)

How To Make oh no!! another carrot cake recipe!!!

  • Step 1
    Preheat oven to 350*
  • Step 2
    Combine all dry ingredients in a large mixing bowl.
  • Step 3
    Mix carrots, oil, pineapple, eggs and hot water in a small bowl.
  • Step 4
    Stir wet ingredients into dry ingredients, mixing until smooth. Stir in walnuts and raisins.
  • Step 5
    Pour into greased and floured 9-inch cake pan. Bake for 45 minutes or until cake springs back when lightly touched. Remove from pan and cool completely. Frost with icing.
  • Step 6
    ICING: Beat cream cheese and butter until fluffy. Gradually add sugar to desired consistency.
  • Step 7
    I am precise with most of these ingredients, but I will add a little more than a cup of carrots...and just a pinch more of the spices.... Ok, maybe a few more walnuts and raisins too! Works great if you just follow the recipe too!
