Not a quick cake to make, but well worth the time. This family recipe was passed down from my great-grandmother and has been a family favorite for generations.

Ingredients For oatmeal cake with topping

  • 1½ c
    flour
  • 1 tsp
    baking soda
  • 3/4 tsp
    cinnamon
  • 1 c
    quick cooking oats
  • 1 c
    sugar
  • 2
    eggs
  • 1/2 tsp
    salt
  • 1/4 tsp
    nutmeg
  • 1¼ c
    boiling water
  • 1/2 c
    butter
  • 1 c
    light brown sugar
  • 1 tsp
    vanilla
  • TOPPING
  • 1/2 c
    light brown sugar
  • 3 tsp
    cream
  • 1/4 c
    butter
  • 3/4 c
    coconut

How To Make oatmeal cake with topping

    Preheat oven to 350° F. Sift together flour, salt, baking soda, nutmeg, and cinnamon in a bowl; set aside.

    Pour boiling water over oats. Cover and let set for 15 minutes.

    Cream butter. Gradually add sugars; beat until light and fluffy. Add eggs and vanilla; beat until light and fluffy.

    Fold into oats; mix well.

    Add dry ingredients; mix well.

    Pour into greased 13x9x2" pan. Bake for 50-55 minutes.

    Combine topping ingredients in a pan and cook over low heat for 5 minutes. Spread over warm cake and broil for 5 minutes.
