oatmeal cake with topping
Not a quick cake to make, but well worth the time. This family recipe was passed down from my great-grandmother and has been a family favorite for generations.

Ingredients
- 1½ cups flour
- 1 teaspoon baking soda
- 3/4 teaspoon cinnamon
- 1 cup quick cooking oats
- 1 cup sugar
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1¼ cups boiling water
- 1/2 cup butter
- 1 cup light brown sugar
- 1 teaspoon vanilla
- TOPPING
- 1/2 cup light brown sugar
- 3 teaspoons cream
- 1/4 cup butter
- 3/4 cup coconut
How To Make oatmeal cake with topping

Step 1Preheat oven to 350° F. Sift together flour, salt, baking soda, nutmeg, and cinnamon in a bowl; set aside.

Step 2Pour boiling water over oats. Cover and let set for 15 minutes.

Step 3Cream butter. Gradually add sugars; beat until light and fluffy. Add eggs and vanilla; beat until light and fluffy.

Step 4Fold into oats; mix well.

Step 5Add dry ingredients; mix well.

Step 6Pour into greased 13x9x2" pan. Bake for 50-55 minutes.

Step 7Combine topping ingredients in a pan and cook over low heat for 5 minutes. Spread over warm cake and broil for 5 minutes.
