oatmeal cake and topping

I am sure that there are many variations on this old fashioned recipe. This is my Grandmother Dixon's version. Mmmmmmmmmmmmmmm

Ingredients

  • CAKE BATTER
  • 1 1/2 cups boiling water
  • 1 cup quick oats
  • 1 stick salted butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 1/2 cups flour
  • 2 - eggs
  • TOPPING
  • 1 stick salted butter melted
  • 1 cup brown sugar
  • 1 can evaporated milk
  • 1 cup flaked coconut
  • 1/2 cup chopped pecans or walnuts

How To Make oatmeal cake and topping

  • Step 1
    Pour boiling water over quick oats and let sit 20 minutes. Do not drain.
  • Step 2
    Combine butter and sugars and mix on medium in the mixer until light and fluffy. Add eggs one at a time and beat well. Add dry ingredients and mix until well blended. Add oatmeal and finish mixing well.
  • Step 3
    Bake at 350 degrees for 35 to 40 minutes until cake is done. While cake is baking, make the topping. Mix all ingredients until mixed well. Spread on hot cake, put cake back in oven under the broiler until the top is brown and bubbly. Remove and let cool. Serve warm or cold.
