Ingredients
- 1 1/4 cups boiling water
- 1 stick butter
- 1 cup oatmeal
- 1 cup sugar
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 cup brown sugar, firmly packed
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 1/3 cups flour
- 2 - eggs
- ICING:
- 4 tablespoons butter
- 1 cup brown sugar, firmly packed
- 1 cup coconut
- 1/3 cup evaporated milk
- 1 cup chopped nuts (i prefer pecans)
- 1 teaspoon vanilla extract
How To Make oatmeal cake

Step 11. Put stick of butter and oatmeal in bowl and pour boiling water over mixture and let stand for 20 minutes. 2. Add remaining cake ingredients in a mixer, then add oatmeal mix, blend well. 3. Bake in a greased 13x9 cake pan at 350 degrees for 40-45 minutes.

Step 2Blend Icing in mixer until smooth. Spread Icing over warm cake ( NOT hot out of the oven), then place under the broiler for 2-3 minutes or until golden brown.
