Ingredients

  • 1 1/4 c
    boiling water
  • 1 stick
    butter
  • 1 c
    oatmeal
  • 1 c
    sugar
  • 1/2 tsp
    nutmeg
  • 1 tsp
    cinnamon
  • 1 c
    brown sugar, firmly packed
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1 1/3 c
    flour
  • 2
    eggs
  • ICING:

  • 4 Tbsp
    butter
  • 1 c
    brown sugar, firmly packed
  • 1 c
    coconut
  • 1/3 c
    evaporated milk
  • 1 c
    chopped nuts (i prefer pecans)
  • 1 tsp
    vanilla extract

How to Make Oatmeal Cake

Step-by-Step

  1. 1. Put stick of butter and oatmeal in bowl and pour boiling water over mixture and let stand for 20
    minutes.
    2. Add remaining cake ingredients in a mixer, then add oatmeal mix, blend well.
    3. Bake in a greased 13x9 cake pan at 350 degrees for 40-45 minutes.
  2. Blend Icing in mixer until smooth.
    Spread Icing over warm cake ( NOT hot out of the oven), then place under the broiler for 2-3 minutes or until golden brown.
