Ingredients

  • 1 1/4 cups boiling water
  • 1 stick butter
  • 1 cup oatmeal
  • 1 cup sugar
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 cup brown sugar, firmly packed
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/3 cups flour
  • 2 - eggs
  • ICING:
  • 4 tablespoons butter
  • 1 cup brown sugar, firmly packed
  • 1 cup coconut
  • 1/3 cup evaporated milk
  • 1 cup chopped nuts (i prefer pecans)
  • 1 teaspoon vanilla extract

How To Make oatmeal cake

  • Step 1
    1. Put stick of butter and oatmeal in bowl and pour boiling water over mixture and let stand for 20 minutes. 2. Add remaining cake ingredients in a mixer, then add oatmeal mix, blend well. 3. Bake in a greased 13x9 cake pan at 350 degrees for 40-45 minutes.
  • Step 2
    Blend Icing in mixer until smooth. Spread Icing over warm cake ( NOT hot out of the oven), then place under the broiler for 2-3 minutes or until golden brown.
