Ingredients

  • 1 c
    quick cooking oats
  • 1 stick
    butter
  • 1 1/4 c
    boiling water
  • 1 c
    brown sugar, firmly packed
  • 1 c
    sugar
  • 1 1/3 c
    flour
  • 2
    eggs
  • 1 tsp
    cinnamon
  • 1 tsp
    vanilla extract
  • 1 tsp
    baking soda
  • 1/4 c
    raisins
  • ICING

  • 1 c
    coconut, flaked
  • 1/4 c
    sweetened condensed milk
  • 1/2 stick
    butter
  • 1 c
    brown sugar, firmly packed

How to Make Oatmeal Cake

Step-by-Step

  1. Combine oats, 1 stick butter and boiling water. Let stand 20 minutes. Set aside
  2. Combine 1 cup brown sugar with remaining ingredients 1 at a time .
  3. Add oats
  4. Bake 350 degrees for 35 minutes in a 8x8 pan, or until an inserted knife comes out clean.
  5. For icing:
    Mix together 1 cup brown sugar, 1/2 stick butter, sweetened milk and coconut
  6. When cake is done spread this mixture over top of cake and return to oven set on broil but watch it carefully as it will burn quickly
