This is my all time favorite cake

Ingredients

  • 1 cup quick cooking oats
  • 1 stick butter
  • 1 1/4 cups boiling water
  • 1 cup brown sugar, firmly packed
  • 1 cup sugar
  • 1 1/3 cups flour
  • 2 - eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 cup raisins
  • ICING
  • 1 cup coconut, flaked
  • 1/4 cup sweetened condensed milk
  • 1/2 stick butter
  • 1 cup brown sugar, firmly packed

How To Make oatmeal cake

  • Step 1
    Combine oats, 1 stick butter and boiling water. Let stand 20 minutes. Set aside
  • Step 2
    Combine 1 cup brown sugar with remaining ingredients 1 at a time .
  • Step 3
    Add oats
  • Step 4
    Bake 350 degrees for 35 minutes in a 8x8 pan, or until an inserted knife comes out clean.
  • Step 5
    For icing: Mix together 1 cup brown sugar, 1/2 stick butter, sweetened milk and coconut
  • Step 6
    When cake is done spread this mixture over top of cake and return to oven set on broil but watch it carefully as it will burn quickly
