I love using oatmeal in many breads and muffins to add a little texture. It is much cheaper then nuts and gives you a little something extra. This is an old recipe that creates a dense, moist cake. It will not be light and fluffy. It can be topped with either of the toppings listed. Play with more spices if you like or add some chopped apples.

Ingredients

  • 1 1/4 cups boiling water
  • 1 cup oatmeal, uncooked
  • 1 stick butter
  • 1/2 cup white sugar
  • 1 1/2 cups brown sugar, firmly packed
  • 2 - eggs
  • 1 1/3 cups all purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • TOPPING 1
  • 1 cup coconut
  • 6 tablespoons butter
  • 1/2 cup brown sugar
  • 1/4 cup sweetened condensed milk
  • 1/2 cup chopped nuts
  • TOPPING 2
  • 1 stick butter
  • 1 cup sugar, white or brown
  • 1 cup cream, half and half, or evaporated milk
  • 1 teaspoon vanilla

How To Make oatmeal cake

  • Step 1
    Combine water and oatmeal, cool 20 min. Add butter, eggs, white sugar, and brown sugar. Mix well. Add the dry ingredients and combine thoroughly. Bake at 350° for 30 min. or until done.
  • Step 2
    Topping 1: Mix together. Put on warm cake when it is done and broil for 2-3 min.
  • Step 3
    Topping 2: In small sauce pan combine first 3 ingredients and cook on low for 1/2 an hour. Remove from heat and add vanilla. Can be cooled and reheated.
  • Step 4
    A little whip cream is a perfect finish to this cake which can be served warm or room temp. Keep in the fridge if you don't plan to eat it in 3-4 days.
