Oatmeal Cake

Ingredients

2 stickbutter, cold

1 cold fashion oatmeal

1 1/4 cboiling water

1 3/4 csugar

1 cbrown sugar

2eggs
-
1 1/3 cflour
-
1 tspbaking soda

1/2 tspcinnamon

1/2 tspsalt

1/2 cevaporated milk
-
1 tspvanilla extract
-
1/2 cchopped pecans
How to Make Oatmeal Cake
- Heat oven to 350, spary cake pan,13x9, with bakers joy or something simular. Place 1 stick of butter and 1 cup of oats to the 1 1/4 cup boiling water in saucepan, place lid on saucepan and set aside.
- Add 1 c. sugar,1 c. brown sugar,2 eggs,1 1/3 c. flour,baking soda,cinnomon and salt and mix well. Add the liquid mixture to your dry mixture. Pour into gresed and floured pan. Bake for 30-40 minutes. Depends on your oven, it could take 45 at the most.
- While cake is baking: add 1 stick of butter,3/4 c. sugar,1/2 c. evaporated milk,1 tsp. vanilla and 1/2 c. chopped pecans into a saucepan. Simmer over low heat till all liquid is blended and slight boil, this should be done about 10-15 min. prior to the cake being done. Take the cake out of the oven and using a fork, place holes all through out the cake and pour hot liquid over the cake. Ready when you are. Enjoy.
