this was my grandmother's favorite cake to make for me when I was younger, I changed it a little but it still reminds me of her cooking.

Ingredients

  • 1 1/4 cups boiling water
  • 1 cup oatmal
  • 1/2 cup butter melted
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 2 - eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup coconut
  • 1 can pineapple diced and drained
  • 1/4 cup butter melted
  • 1/2 cup brown sugar
  • 1 cup coconut
  • 1 can reserved pineapple juice from can

How To Make oatmeal cake

  • Step 1
    preheat oven to 350. In medium bowl, pour boiling water over oats, let stand for 20 minutes.
  • Step 2
    add butter, sugars, and vanilla; mix together well. add eggs, stir til blended.
  • Step 3
    add in flour, baking soda, salt, cinnamon, and nutmeg; mix til blended. fold in coconut and pineapple, pour into a 13x9 greased pan.
  • Step 4
    bake for 50 minutes, when out of oven poke holes into top of cake with the end of a spoon. pour topping over cake, let cool cut into squares.
  • Step 5
    Topping: combine all ingredients, spread evenly over cake.
