oatmeal cake
this was my grandmother's favorite cake to make for me when I was younger, I changed it a little but it still reminds me of her cooking.

Ingredients
- 1 1/4 cups boiling water
- 1 cup oatmal
- 1/2 cup butter melted
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon vanilla
- 2 - eggs
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup coconut
- 1 can pineapple diced and drained
- 1/4 cup butter melted
- 1/2 cup brown sugar
- 1 cup coconut
- 1 can reserved pineapple juice from can
How To Make oatmeal cake

Step 1preheat oven to 350. In medium bowl, pour boiling water over oats, let stand for 20 minutes.

Step 2add butter, sugars, and vanilla; mix together well. add eggs, stir til blended.

Step 3add in flour, baking soda, salt, cinnamon, and nutmeg; mix til blended. fold in coconut and pineapple, pour into a 13x9 greased pan.

Step 4bake for 50 minutes, when out of oven poke holes into top of cake with the end of a spoon. pour topping over cake, let cool cut into squares.

Step 5Topping: combine all ingredients, spread evenly over cake.
