I added the cool time into the cook timeI love this cake its a little work but well worth it

Ingredients

  • 1 1/2 cups boiling water
  • 1 cup oats not instant
  • 1 1/2 cups flour self rising
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 2 large eggs
  • 1/2 cup oil
  • 1 teaspoon cinnamon
  • TOPPING
  • 1/3 cup evaporated milk
  • 2 tablespoons butter
  • 2 large egg yolks
  • 1/2 cup chopped pecans
  • 1/2 cup coconut
  • 1/2 teaspoon pure vanilla extract

How To Make oatmeal cake

  • Step 1
    preheat oven to 350 In a medium bowl pour water add oats and let stand for 20 min
  • Step 2
    in a large bowl add all other ingredients,add oats mixing well pour into a greased 9x13 pan Bake 40 mins When cake is done let cool completely.
  • Step 3
    while cake is baking, in a med sauce pan add milk,butter,sugar,and eggs cook over low heat stirring constantly until thick.remove from heat stir in pecans,coconut and vanilla.let cool completely.Then pour icing over cake serve or put in fridge
