Ingredients

  • 1 1/2 c
    boiling water
  • 1 c
    oats not instant
  • 1 1/2 c
    flour self rising
  • 1/2 tsp
    salt
  • 1 c
    brown sugar
  • 2 large
    eggs
  • 1/2 c
    oil
  • 1 tsp
    cinnamon
  • TOPPING

  • 1/3 c
    evaporated milk
  • 2 Tbsp
    butter
  • 2 large
    egg yolks
  • 1/2 c
    chopped pecans
  • 1/2 c
    coconut
  • 1/2 tsp
    pure vanilla extract

How to Make oatmeal cake

Step-by-Step

  1. preheat oven to 350 In a medium bowl pour water add oats and let stand for 20 min
  2. in a large bowl add all other ingredients,add oats mixing well pour into a greased 9x13 pan Bake 40 mins When cake is done let cool completely.
  3. while cake is baking, in a med sauce pan add milk,butter,sugar,and eggs cook over low heat stirring constantly until thick.remove from heat stir in pecans,coconut and vanilla.let cool completely.Then pour icing over cake serve or put in fridge
