I first made this cake when I was about 10 yrs old. It won me a blue ribbon at the 4-h fair. I was so proud. It's a very easy but tasty cake. Hope you enjoy.

Ingredients

  • 1 1/4 cups boiling water
  • 1 cup quick cooking oats
  • 2 sticks butter
  • 2 - eggs
  • 1 cup sugar
  • 1 1/3 cups flour
  • 1 teaspoon soda
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • ICING
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 stick butter
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla
  • 1 cup coconut
  • 1 cup chopped pecans

How To Make oatmeal cake

  • Step 1
    Place oatmeal in mixing bowl with 1 stick of butter. Pour boiling water over oatmeal cover and let sit for 20 min.
  • Step 2
    Add flour,soda,cinnamon and salt together set aside.
  • Step 3
    Cream 1 stick of butter,sugar together add eggs one at a time beat till fluffy. Add oatmeal mix well.Add dry ingedents mix well.
  • Step 4
    Pour in a greased 13x9 in pan. Bake for 30 to 45 min at 350 degress.
  • Step 5
    In a saucepan mix 1/2 stick of butter, sugar, brown sugar and evaporated milk bring to a boil. Remove from heat add coconut and pecans. Mix well.
  • Step 6
    Take cake from oven while still warm spread on icing carefully. But in oven under broil till lightly browned on top. Cool Enjoy
