not just another banana muffin
We always have a banana or two that gets too ripe. I place them in the freezer. The outside turns black but the inside is fine for Banana Bread of Muffins. They also seem to have a stronger flavor, which I like. This will make two loafs or 24 muffins. As you see, I made muffins and mini bundt cakes.

Ingredients
- 1/2 cup oil
- 1 3/4 cups sugar
- 2 large eggs
- 1/4 cup buttermilk
- 1/2 teaspoon banana flavoring (optional)
- 3 teaspoons vanilla extract
- 4 large very ripe bananas
- 2 cups all purpose flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups chopped walnuts (optional)
- *NOTE - if nuts not used, add 2 additionsl tbls. flour
How To Make not just another banana muffin

Step 1Preheat oven to 375, Spray with oil and flour baking spray or grease and flour baking pans

Step 2Cream sugar and oil well

Step 3add eggs, mix well

Step 4mash bananas and add to wet mixture

Step 5Add buttermilk, and both flavorings. mix well

Step 6Combine Flour,baking soda and salt, add to wet mixture. Mix until just combined well

Step 7add chopped nuts if using them or additional flour

Step 8Pour into 2 prepared large loaf, or muffing pans

Step 9Bake loafs for about 45 min. adjust for muffins or mini cake pans. Bake until done in the center.
