not just another banana muffin

We always have a banana or two that gets too ripe. I place them in the freezer. The outside turns black but the inside is fine for Banana Bread of Muffins. They also seem to have a stronger flavor, which I like. This will make two loafs or 24 muffins. As you see, I made muffins and mini bundt cakes.

Ingredients

  • 1/2 cup oil
  • 1 3/4 cups sugar
  • 2 large eggs
  • 1/4 cup buttermilk
  • 1/2 teaspoon banana flavoring (optional)
  • 3 teaspoons vanilla extract
  • 4 large very ripe bananas
  • 2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups chopped walnuts (optional)
  • *NOTE - if nuts not used, add 2 additionsl tbls. flour

How To Make not just another banana muffin

  • Step 1
    Preheat oven to 375, Spray with oil and flour baking spray or grease and flour baking pans
  • Step 2
    Cream sugar and oil well
  • Step 3
    add eggs, mix well
  • Step 4
    mash bananas and add to wet mixture
  • Step 5
    Add buttermilk, and both flavorings. mix well
  • Step 6
    Combine Flour,baking soda and salt, add to wet mixture. Mix until just combined well
  • Step 7
    add chopped nuts if using them or additional flour
  • Step 8
    Pour into 2 prepared large loaf, or muffing pans
  • Step 9
    Bake loafs for about 45 min. adjust for muffins or mini cake pans. Bake until done in the center.
