norma's spice cake with fresh peach sauce

Peach season is about to end so I thought I'd use up the last of my peaches for this wonderful cake. This is another Cake Mix recipe guy and gals. Family, friends and neighbors have injoyed this when visiting us during the summer months. Really refreshing with those fresh peaches on top. I have also served this same cake with my homemade cinnamon apple sauce. Yummy!

Ingredients

  • - cake:
  • 1 package duncan hines moist deluxe spice cake mix
  • 3 - egg whites
  • 1 1/4 cups water
  • 1/2 cup vegetable oil
  • - confectioners' sugar (optional)
  • - sauce:
  • 6 cups sliced fresh peaches
  • 1 cup water
  • 1/3 cup sugar
  • 1/8 teaspoon ground cinnamon

How To Make norma's spice cake with fresh peach sauce

  • Step 1
    Preheat your oven to 350
  • Step 2
    Grease and flour 10 inch bundt or tube pan
  • Step 3
    Place cake mix, egg whites, water and oil in large mixing bowl and beat at low speed until blended.
  • Step 4
    Turn speed up to medium and mix for 2 minutes.
  • Step 5
    Pour into prepared pan and bake for 42 to 47 minutes or until toothpick inserted near center comes out clean.
  • Step 6
    Remove from oven and cool in pan for 25 minutes.
  • Step 7
    Invert onto serving plate and cool completely.
  • Step 8
    Dust with confectioners' sugar if desired.
  • Step 9
    For sauce:
  • Step 10
    Combine peaches and water in large saucepan and cook over medium heat for 5 minutes.
  • Step 11
    Reduce heat to low, cover and simmer 10 minutes.
  • Step 12
    Remove from heat and let cool,reserving 1/2 cup peach slices in a bowl.
  • Step 13
    Combine remaining peaches and any cooking liquid, sugar and cinnamon in blender or food processor and process until smooth.
  • Step 14
    Pour over reserved peach slices and stir until slices are covered with pureed peaches.
  • Step 15
    Slice your cake and serve with peach sauce.
  • Step 16
    Note: The fresh peach sauce can be served warm or chilled.
