no icing needed zucchini cake

My dad made this for me once on my birthday..I said...uummm yuck..who wants a veggie cake..he said..TRY IT FIRST...one of my favorite cakes to eat & make...I of course revised the recipe and now make it for my family...one of my hubby's fave cakes...=)

Ingredients

  • 2 cups sugar
  • 2 - eggs
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup vegetable oil
  • 1/2 teaspoon nutmeg
  • 2 cups grated zucchini, including peel

How To Make no icing needed zucchini cake

  • Step 1
    pre-heat oven to 350*...choose what pan you'd like to use ( cupcake holders here ) and lightly coat with non-stick spray ( butter flavor keeps the cake super moist )
  • Step 2
    Mix first 10 ingredients together. Add zucchini and mix for about 3 minutes. Pour into desired pan and bake till toothpick comes out clean.
  • Step 3
    You dont need a frosting for this cake; it's super moist & delicious..but if you're like me..a nice vanilla glaze or cream cheese frosting pairs well with this cake...ENJOY!!!
