Ingredients

  • WHIP CREAM:
  • 1 cup heavy cream
  • 3 tablespoons confectioners' sugar
  • 1 teaspoon pure vanilla extract
  • CAKES:
  • 40 - chocolate wafer cookies
  • DECORATION:
  • - multi colored sprinkles

How To Make no bake mini cupcakes

  • Step 1
    WHIP CREAM: In standing mixer with whisk, beat heavy cream, sugar & extract on high speed until medium soft peaks form.
  • Step 2
    ASSEMBLY: Spread 2 tsp whip cream over all 40 wafer cookies. Stack with 4 cookies each. Place each "cupcake" in cupcake liners or in large container & refrigerate overnight. (The cookies will soften into a cake-like consistency.)
  • Step 3
    SERVING TIME: Garnish top cookie frosting with sprinkles.
