3 Tbspconfectioners' sugar

1 tsppure vanilla extract

40chocolate wafer cookies
- DECORATION:

multi colored sprinkles
How To Make no bake mini cupcakes

1WHIP CREAM: In standing mixer with whisk, beat heavy cream, sugar & extract on high speed until medium soft peaks form.

2ASSEMBLY: Spread 2 tsp whip cream over all 40 wafer cookies. Stack with 4 cookies each. Place each "cupcake" in cupcake liners or in large container & refrigerate overnight. (The cookies will soften into a cake-like consistency.)

3SERVING TIME: Garnish top cookie frosting with sprinkles.
