- WHIP CREAM:
- 1 cup heavy cream
- 3 tablespoons confectioners' sugar
- 1 teaspoon pure vanilla extract
- CAKES:
- 40 - chocolate wafer cookies
- DECORATION:
- - multi colored sprinkles
How To Make no bake mini cupcakes

Step 1WHIP CREAM: In standing mixer with whisk, beat heavy cream, sugar & extract on high speed until medium soft peaks form.

Step 2ASSEMBLY: Spread 2 tsp whip cream over all 40 wafer cookies. Stack with 4 cookies each. Place each "cupcake" in cupcake liners or in large container & refrigerate overnight. (The cookies will soften into a cake-like consistency.)

Step 3SERVING TIME: Garnish top cookie frosting with sprinkles.
