no bake mango/blueberry cheesecake

hubbies fav fruit are mango's and blueberries so i makin this for our 6 yr weddin anniversary next weekend

Ingredients

  • 2 pounds light cream cheese [4,8 oz pkg at room temp]
  • 2 pints light sour cream
  • 24 ounces tub light cool whip
  • 2 1/2 cups crushed graham crackers
  • 1/2 stick margarine softened but not melted
  • 1 cup splenda,divided[see directions]
  • 6 large fresh mangos,pit removed and cubed
  • 1 pint fresh blueberries

How To Make no bake mango/blueberry cheesecake

  • Step 1
    first put cracker crumbs,margarine and 1/3 splenda in 9x13 glass pan mix well then cover bottom and start up sides put in fridge while u make fillin
  • Step 2
    take mangos and blueberries and put in med size bowl add a couple tablespoons of splenda mix it with fruit put in fridge
  • Step 3
    put cream cheese into lg bowl whip well with hand mixer til light and fluffy add spenda a tablespoon at a time taste stop addin when it sweet enough for u..[u can add a T of vanilla now if u want but do not have too]......than add sour cream mix well than stir in 1/2 the cool whip.. divid in 1/2 and add 1/2 to fruit mix
  • Step 4
    makin cheesecake......have crust ready and cheese fillin and cheese with fruit fillin and cool whipnow startin with crust add layer of plain fillin than fruit fillin then frost with cool whip..... to serve slice and put on plate[here i like to have a couple berries and an extras mango cubed to put on top of each piece as u serve it] this is very rich so ya don't need real big pieces but once ya eat it u will want more !!!!
