Ingredients
- 1 3/4 cups graham cracker crumbs for the crust
- 1/4 cup light brown sugar
- 1/2 cup melted butter
- FOR THE FILLING
- 4 - 8 ounce packages cream cheese
- 5 - eggs
- 1 1/4 cups water
- 1 can 15 ounces of pumpkin puree
- 1/4 cup all purpose flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground clove
- 1/8 teaspoon ground allspice

Step 1To make the crust, add together graham cracker crumbs, brown sugar and butter. Mix well. Grease a 9 inch spring-form pan and press the crust mixture evenly over the bottom. Bake 5 minutes at 350 degrees. Remove from oven and let cool.

Step 2To make the filling, use a mixer to beat the cream cheese in a bowl. While continuously mixing, add the eggs (one at a time), the sugar (slowly), the pumpkin, the flour and the spices.

Step 3Pour mixture onto the crust and bake at 350 degrees for approximately 1 hour or until the mixture has set and a toothpick comes out clean when inserted into the center of the cheesecake. Remove from oven and let cool.
