This recipe came with my springform pan. First time I made it was for my youngest daughter's baby shower and it was a huge hit. Original recipe calls for graham cracker crust (which I dislike) and full fat ingredients. I used 1/3 reduced fat cream cheese, light sour cream and light butter. I also made a strawberry glaze and served light whipped cream with it although it was delicious without it. I followed mixing,baking and cooling instructions exactly and this was an amazing cheesecake.

Ingredients

  • 1 1/2 c
    vanilla cookie crumbs
  • 2 1/2 Tbsp
    melted butter
  • 32 oz
    cream cheese, room temperature
  • 1 1/2 c
    white sugar
  • 1 1/2 c
    milk
  • 4
    eggs
  • 1 c
    sour cream
  • 1 Tbsp
    vanilla extract
  • 1/4 c
    all-purpose flour

How to Make New York Cheesecake

Step-by-Step

  1. PREP TIME DOES NOT INCLUDE TIME TO BRING CREAM CHEESE TO ROOM TEMP.
  2. Preheat oven to 350. Grease pan. In a medium bowl mix cookie crumbs with melted butter. Press into bottom of springform pan. In large bowl mix cream cheese with sugar until smooth. Blend in milk , and then mix in eggs 1 at a time mixing just enough to incorporate. Mix in sour cream,vanilla and flour until smooth. Pour filling into prepared crust. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with door closed for 6 hours.(This prevents cheesecake from cracking.) Chill in refrigerator until serving.
