Mom knew this recipe by heart. She made them often for us kids back in the 1950's. She used different icings (chocolate, white, strawberry, peanut butter) or served them with fresh strawberries (or raspberries) and whipped cream. So good and easy, too.

- 1 large egg
- 1/2 cup cocoa
- 1/2 cup shortening, softened but not completely melted
- 1 1/2 cups cake flour
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 cup sugar
- 1/2 cup hot water

Step 1Preheat oven to 350 degrees. Place paper liners in muffin cups. Place ingredients in mixer bowl in order given and beat well to mix. Pour into muffin cups to about 2/3-3/4 full. Bake for 20-25 minutes or until done (test with toothpick). Cool on wire rack and serve with icing or whipped cream.
