Half cvegetable oil

Half cbutter

3 csugar

2 cmashed bananas

4eggs beaten

3 3/4 cself rising flour sifted

1 cbuttermilk

1 tspvanilla extract

2 Tbsporange juice

1 cchopped pecans
- FROSTING

Half cbananas mashed

1 tsplemon juice

1/3 cbutter softened

1 box16 oz. powdered sugar

4 Tbspmilk

1 cflaked coconut toasted

2/3 cchopped pecans
How To Make nana's bodacious banana cake

1Preheat oven to 350 grease and flour sheet cake pan or 3 8 inch rounds. Cream oil, butter and sugar together. Add mashed bananas.

2Stir in beaten eggs.

3Start adding the flour to the banana mixture and alternate with the buttermilk, ending with the flour. Mix well but do not over mix.

4Add orange juice, vanilla and chopped pecans at the end and stir into the batter.

5Grease 3 9" cake pans. Divide and pour the batter into the pans or bake as a sheet cake and bake in a preheated 350 degree oven for 35 minutes. Cool in pans for 10 minutes before removing.

6Frosting Combine mashed bananas and lemon juice, then cream with the softened butter.

7Gradually add in powdered sugar and milk until well combined.

8Stir in toasted coconut and pecans. This should yield 3 1/2 cups of frosting.

9If you use round cake pans Frost the cake between each layer and on top, leaving the sides unfrosted.
