Ingredients

  • Half cup vegetable oil
  • Half cup butter
  • 3 cups sugar
  • 2 cups mashed bananas
  • 4 - eggs beaten
  • 3 3/4 cups self rising flour sifted
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 tablespoons orange juice
  • 1 cup chopped pecans
  • FROSTING
  • Half cup bananas mashed
  • 1 teaspoon lemon juice
  • 1/3 cup butter softened
  • 1 box 16 oz. powdered sugar
  • 4 tablespoons milk
  • 1 cup flaked coconut toasted
  • 2/3 cup chopped pecans

How To Make nana's bodacious banana cake

  • Step 1
    Preheat oven to 350 grease and flour sheet cake pan or 3 8 inch rounds. Cream oil, butter and sugar together. Add mashed bananas.
  • Step 2
    Stir in beaten eggs.
  • Step 3
    Start adding the flour to the banana mixture and alternate with the buttermilk, ending with the flour. Mix well but do not over mix.
  • Step 4
    Add orange juice, vanilla and chopped pecans at the end and stir into the batter.
  • Step 5
    Grease 3 9" cake pans. Divide and pour the batter into the pans or bake as a sheet cake and bake in a preheated 350 degree oven for 35 minutes. Cool in pans for 10 minutes before removing.
  • Step 6
    Frosting Combine mashed bananas and lemon juice, then cream with the softened butter.
  • Step 7
    Gradually add in powdered sugar and milk until well combined.
  • Step 8
    Stir in toasted coconut and pecans. This should yield 3 1/2 cups of frosting.
  • Step 9
    If you use round cake pans Frost the cake between each layer and on top, leaving the sides unfrosted.
